CHICKEN SCALOPPINE 
1 1/2 lbs. chicken breasts, skinned and boned
Flour
Salt and pepper
4 tbsp. olive oil
1 clove garlic
1 sm. onion, sliced
1 c. fresh mushrooms, quartered
1 c. chicken broth
1/2 c. dry white wine
1/4 c. tomato juice
1/8 tsp. ground nutmeg

Cut chicken into bite size pieces. Sift the seasoning into the flour and dredge the chicken pieces in the mixture. Brown on both sides in olive oil at medium heat. Add onions and garlic. Saute for 3 minutes. Add remaining ingredients. Simmer for 30 minutes stirring occasionally. Remove from heat and let stand for another 10 minutes. Serves 6 people.
