MOCK CHILE RELLENO 
1 lb. Cheddar cheese
1 lb. Jack cheese
1 lg. can chiles, diced
4 eggs
1 can (13 oz.) evaporated milk
2 tbsp. flour
Salt and pepper
1 can (8 oz.) tomato sauce
2 cloves garlic

Grate cheeses and mix together. Beat eggs with milk, flour and seasonings. Place 1/2 of the cheese mixture over chiles. Pour milk and egg mixture over all. Add remaining cheese mixture. Bake at 350°F for 30 minutes. Add garlic to tomato sauce and spread evenly over casserole after it has cooked the 30 minutes. Return to oven for 15 minutes or until set.
