CHILE RELLENOS 
Fresh or canned green chilies
Eggs
Flour
Cheese
Spices

Use 1 to 1 ratio of eggs to flour (by the tablespoon). Separate egg whites and yolks and put in separate bowls. Beat egg whites until stiff peaks form. Fold in egg yolks. Add flour (1 egg to 1 tablespoon flour) and mix. Add spices, dip green chilies stuffed with cheese into batter and fry on medium high heat in greased skillet until golden brown.

Thank you for posting this recipe, the ratio is perfect. I am growing my own peppers this year and I am hoping for a bountiful harvest!! Then, I can make as many of these as I want. Such simple, easy recipes are usually the best tasting to. I order this a lot when we eat Mexican and I never get tired of it.
