MIXED VEGETABLE CASSEROLE 
2 cans mixed vegetables, drained
1 c. mayonnaise
1 c. celery, chopped
1 c. shredded Cheddar cheese
1 onion, chopped
1 roll Ritz crackers, crushed
1 stick butter, melted

Mix all ingredients except crackers and butter together and place in casserole dish. Top mixture with cracker crumbs mixed with butter. Bake at 300 degrees for 30 minutes.
