MIXED VEGETABLE CASSEROLE 
2 cans mixed vegetables, drained
1 can sliced water chestnuts
1 c. onion, chopped
1 c. celery, chopped
1 c. sharp cheddar cheese
2/3 c. mayonnaise
Salt to taste
Pepper to taste

TOPPING:

1 section Ritz crackers
3/4 stick butter

Mix all ingredients except topping and bake 30 minutes at 350 degrees. Mix crushed crackers with butter. Add to top of casserole and cook an additional 15 minutes.
