PORK CHOP CASSEROLE 
1 onion, chopped
1 c. rice
4-5 pork chops
Salt & pepper to taste
1 can beef bouillon or chicken broth
1 can water
1 can sliced mushrooms

Brown pork chops, both sides, in small amount of oil. Remove from pan. Brown onion in same pan, add rice and brown slightly. Add bouillon, water, mushrooms, place pork chops on top of this mixture, lower heat and cover. Cook on low heat for 1 hour. I do this in electric frying pan. You can also put mixture in casserole dish in same manner and bake in moderate oven for 1 1/2 hours.
