BREAKFAST CASSEROLE 
1 lb. sausage, cooked scrambled, drained
6 slices white bread
1 c. grated Longhorn cheese
2 c. half and half
5 eggs
1 tsp. each of salt and dry mustard (mix together)

Fry and scramble sausage; drain. Cut crust from bread and discard. Butter both sides of bread and cut in cubes. Spread buttered bread on bottom of 9x13x2 pan. Top with sausage. Cover completely with grated cheese. Mix remaining ingredients together; beat well. Pour over top of cheese, sausage, bread. Refrigerate at least 8 hours. Bake at 350 degrees for 40 to 50 minutes or until slightly browned.
