MARINADE FOR FISH OR CHICKEN 
For about 1 1/2 pounds of meat or fish.

2 tbsp. minced fresh ginger
4 garlic cloves, peeled
2 tbsp. olive oil
1 tbsp. vegetable oil
1 tsp. powdered dry mustard
1 sm. bunch fresh coriander
3 tbsp. chopped scallions including the green
Juice of 1 lemon

Combine all the ingredients in a food processor and process until well blended.

Pour marinade over fish or chicken in non-metallic container and marinate a couple of hours covered with plastic wrap.
