CHERYL'S WHARF STYLE FRIED FISH BATTER | |
2 lb. tilapia fillets (or your favorite fish) 1 cup white flour 3/4 corn flour (not meal) 2 tsp. cooking oil 1 tsp. onion powder 1 tsp. garlic powder 1 tsp. season salt 1 to 1 1/2 cups buttermilk (or milk with sour cream to thicken it) flour (for dusting fillets) Dry fillets and lightly dust then with flour. Set aside. Mix first six ingredients together. Add buttermilk until the batter is like pancake batter. Dip fillets in batter and deep fry at 350°F for 3 minutes each side turning once, Fillets should be golden brown and crispy. Place cooked fillets in warm (190°F) oven until ready to serve.
