ZUCCHINI CASSEROLE (Microwave) 
1 3/4 lb. zucchini, peeled and slice lengthwise
1 lb. ground beef
1 garlic
1 (8 oz.) tomato sauce
1 tsp. salt
2 tsp. Italian seasoning
1 c. sm. curd cottage cheese
1 egg, beaten
1 tsp. parsley flakes
1/2 c. Parmesan cheese
2 c. Mozzarella cheese
1/4 c. bread crumbs

Place zucchini in microwave dish. Cover with plastic - microwave 10-12 minutes until crisp. Drain and set aside.

Place beef and garlic in 1 quart casserole and microwave until not pink. Drain off grease. Stir in sauce and seasoning.

Mix cottage cheese, egg and parsley. Place alternate layers of zucchini, cottage cheese, beef and Parmesan cheese, Mozzarella cheese. Top with crumbs. Cover with waxed paper. Microwave 14-16 minutes. Let stand 10 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
