MICROWAVE POTATO AND ZUCCHINI

3 med. potatoes
1 med. zucchini
Butter
8 oz. mozzarella cheese
2 eggs, beaten
1 sm. onion, chopped
Bread crumbs

Coat a quiche dish with butter and bread crumbs; set aside. Boil potatoes in their skins until soft. While the potatoes boil grate the zucchini. When the potatoes are cooked, peel the potatoes and mash with a fork. Add the cheese, 2 beaten eggs, onion and the zucchini. Put the mixture in the quiche dish. Cover this with bread crumbs and dot with butter. Microwave uncovered for 15-20 minutes. Turn every 5 minutes. Let stand 5 minutes when done before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
