ZUCCHINI AND POTATO OMELET 
1 sm. onion, chopped
3 sm. zucchini squash, diced
4 med. potatoes, diced
5 to 8 eggs, beaten
Salt and pepper to taste
3 sliced American cheese
Chopped parsley or salami bits, or ham bits (optional)

Put some oil in frying pan. Saute onion, zucchini, and potatoes until tender. Add eggs, salt, and pepper. When almost cooked, add pieces of cheese to top of omelet. Cover and cook until set.
