ZIPPY ZUCCHINI (MICROWAVE) 
4 c. zucchini, cut into chunks
4 eggs, beaten
1 (2 oz.) jar pimiento, drained
1/8 tsp. pepper
1/2 med. onion, sliced thin
1/2 tsp. salt
1 1/2 c. grated Cheddar cheese

Place zucchini and onion in 10 x 6 x 2 dish. Cover with plastic wrap, turning 1 edge back slightly to vent. Microwave at High for 7 minutes, drain. In a large bowl, mix together eggs, cheese, pimiento, salt and pepper. Add zucchini and onions, stirring well. Grease dish in which vegetables were cooked. Pour mixture into dish and cover with paper towel. Microwave on Med High for 8 to 10 minutes, stirring and removing paper towel after 4 minutes, until center is set. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
