ZUCCHINI CASSEROLE - MICROWAVE 
4 c. thinly sliced zucchini
1/4 c. hot water

Place zucchini in a 1 1/2-quart glass casserole with water. Microwave on high, covered, for 7 minutes; drain.

3/4 c. shredded sharp cheese
1 egg
1/2 c. dairy sour cream
1 tbsp. flour

Mix cheese, egg, sour cream and flour; stir into zucchini. Microwave on high, covered, for 3 minutes. Stir.

3 slices bacon, cooked and crumbled
1/4 c. browned bread crumbs

Combine bacon and bread crumbs. Sprinkle over casserole. Microwave on high, covered, for 2 minutes. Yield: 6-8 creamy, cheesy servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
