ZUCCHINI CASSEROLE (MICROWAVE) 
1 1/2 lbs. zucchini, thinly sliced
2 c. stewed tomatoes
1 tsp. salt
2 c. shredded Mozzarella cheese

Combine zucchini and salt in 1 1/2 quart casserole dish. Cover and place in microwave oven and cook for 7 minutes, stirring once. Remove half of zucchini from casserole dish. Layer half of tomatoes and cheese on top of the zucchini. Repeat layers. Cover. Return dish to microwave oven and cook until cheese is melted, 3 to 5 minutes. Serves 4 to 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
