ZUCCHINI MEDLEY - Microwave 
2 med. zucchini, sliced diagonally
1 med. onion, halved and thinly sliced into rings
1 tsp. dried oregano leaves, crumbled (or other herb)
Salt and freshly ground pepper
2 tbsp. (1/4 stick) butter
2 med. tomatoes, sliced
1/2 green pepper, cut into 1/2 inch slices
1/2 c. shredded Parmesan, Monterey Jack or Cheddar cheese (optional)

Arrange zucchini slices in bottom of 2 quart round casserole. Top with onion. Sprinkle with some of oregano, salt and pepper. Dot with some of butter. Top with tomatoes, then green pepper. Dot with remaining butter and sprinkle with remaining oregano. Cover and cook on High 7 minutes. Sprinkle with cheese if desired. (If using Monterey Jack or Cheddar, cook on High 1 minute to melt cheese.) Serve immediately.

Since microwave ovens vary in power, you may need to adjust your cooking time.
