ZUCCHINI JAM 
6 c. zucchini, peeled & shredded
6 c. sugar
1/2 c. lemon juice
1 c. crushed pineapple
1 (6 oz.) pkg. lemon, apricot, peach or orange Jello

Grate zucchini, boil with water until clear, about 12 to 15 minutes. Add all other ingredients except Jello and boil 6 minutes, remove from heat. Add Jello. Stir to dissolve. Pour into hot sterilized jars and seal.

Makes 4 pints.
