ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. cooking oil
2 c. uncooked shredded zucchini
1 tsp. cinnamon
2 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. nutmeg

Preheat oven 350 degrees.

In large bowl, beat eggs until light. Gradually add sugar, beating well. Beat in oil, then zucchini. Add cinnamon and vanilla beating well. Add remaining ingredients. Pour into greased and floured loaf pans. Bake approximately 40 minutes, until toothpick inserted in loaf comes out clean. Cool before slicing. Loaves may be frozen.

Yield: 2 large loaves, 1 bundt cake or 4 to 5 small loaves.
