MEXICAN POTATOES | |
1 onion 1 clove garlic 2 tbsp. olive oil 1 tsp. chili powder 1/4 tsp. oregano Salt and pepper to taste 1 c. water 4 med. potatoes Saute onion in oil until soft and golden. Add garlic and other seasonings. Add water and potatoes (cut in quarters). Cook in 12 inch frying pan. Cover, bring to boil. Lower heat and simmer 25 to 30 minutes or until potatoes are tender. Remove potatoes, reduce liquid by half. Pour over potatoes. Serves 4 to 6. |
