SHANA'S BEST NACHOS EVER! | |
2 chicken breasts (grilled and cut into pieces*) 8 oz. cheddar cheese, grated 8 oz. Monterey jack cheese, grated 1 cup refried beans HOMEMADE NACHOS: 12 round corn tortillas, cut into eighths oil, for deep frying SUGGESTED TOPPING: 1 tomato, diced 1/4 cup cilantro 1/4 cup onion, diced 2 jalapeno chilies, sliced juice of 1 lime Prepare tomatoes, cilantro, onion and chilies in bowl. Mix with lime juice and set aside. Heat oil in deep fryer or large saucepan. Cut tortillas into eighths. Add to oil in batches and fry until crispy and lightly browned, about 1 to 2 minutes. Remove chips and drain on paper towels. Arrange nachos, cheese, chicken, refried beans (repeat). Once layers are finished top with topping mixture.
