SWEET POTATO BISCUITS 
Great breakfast treat!

2 cups all-purpose flour
1 tbsp. baking powder
1/2 tsp. baking soda
3 tbsp. light brown sugar
pinch of ginger
pinch of grated orange rind
6 tbsp. butter
1 cup (10 oz.) mashed cooked sweet potatoes
2/3 cup buttermilk

Sift flour, baking powder and baking soda together. Add sugar, ginger and orange rind. Cut butter into mixture. Add potatoes and buttermilk. Add milk slowly and knead to right consistency. Pat out 1/2-inch thick on cutting board. Cut into 1 1/2 to 2-inch circles. Dot with fork. Brush with melted butter.

Bake at 400°F for 16 to 18 minutes.
