SWEET POTATO BISCUITS 
2 1/2 c. biscuit mix
1/3 c. butter
1 c. sweet potatoes, cooked and mashed
1/2 c. milk

Preheat oven to 450 degrees. Mix all ingredients until soft dough forms. Turn onto surface dusted with flour or baking mix; roll in flour to cool. Shape into ball. Knead 3 or 4 times. Roll 1/2 inch thick. Cut with 2-inch cutter dipped in flour. Place biscuits with edges touching on ungreased cookie sheet. Bake 10 to 12 minutes or until golden brown. Makes 18 to 20 biscuits.
