SWEET POTATO BISCUITS 
2 eggs
1/2 c. sugar
1 c. cooked, mashed sweet potato (about 3/4 lb. uncooked)
2 tbsp. butter, softened
3 tbsp. solid vegetable shortening
1 tsp. salt
4 tsp. baking powder
2 c. all purpose flour

Preheat oven to 350 degrees. In a large mixing bowl beat eggs with sugar. Add mashed potato and mix well. Mix in butter, shortening and salt and baking powder. Add flour, one half cup at a time, mixing after each addition. Dough will be sticky. Turn dough out on lightly floured board. Flour hands and knead gently 3 to 4 times. Roll out to 1/2" thickness. Cut with 2" biscuit cutter or lightly floured rim of drinking glass. Place on ungreased baking sheet and bake for 15 minutes.
