PILLOW POTATO BISCUITS 
1/2 c. instant mashed potato flakes
2 tbsp. butter, softened
1/3 c. cold water
Milk for biscuit tops (optional)
1 tsp. sugar
1/2 c. hot water
3 c. prepared biscuit mix

Combine potato flakes, sugar, butter, and hot water; mix well. Add cold water and biscuit mix, stirring until well blended. Add a little more cold water if necessary to make a soft dough. Turn out on a lightly floured surface; knead about 10 times.
