MEXICAN BEEF PIE | |
1 1/2 lbs. ground beef 1 lg. bell pepper 1 lg. onion 2 tomatoes 1 can (16 oz.) Ranch Style beans 1 can Ro-tel tomatoes 1 can cream of chicken soup 1 lb. Velveeta cheese 12 corn tortillas Salt & pepper Preheat oven to 350 degrees. Chop onions and bell pepper. Add to ground beef and brown in a skillet. Salt and pepper to taste. Drain excess fat. Chop tomatoes and add to meat. Let simmer 5 to 7 minutes. Add Ro-tel tomatoes. Arrange corn tortillas in a large casserole dish. Place 1 layer of meat mixture, beans, cheese, sliced. Add another layer of tortillas, meat, beans and cheese. Spread cream of chicken soup over top. |
