SWEET POTATO CASSEROLE 
4 c. mashed sweet potatoes
1/3 c. butter
2 tbsp. sugar
1/2 c. milk
1/3 c. flaked coconut
2 tbsp. flour
2 eggs, beaten
1/3 c. chopped pecans
1/3 c. brown sugar
2 tbsp. butter, melted

Mix sweet potatoes, 1/3 cup butter and sugar; beat in eggs and milk. Pour mixture into 1 1/2 to 2 quart casserole. Combine pecans, coconut, brown sugar and flour; stir in melted butter. Sprinkle mixture over sweet potatoes. Bake at 350 degrees for about an hour. Serves 8.
