SWEET POTATO CASSEROLE | |
4 c. hot mashed sweet potatoes 1/3 c. butter 2 tbsp. sugar 2 eggs, beaten 1/3 c. brown sugar 1/3 c. pecans, chopped 2 tbsp. butter 1/2 c. milk 2 tbsp. flour Mix sweet potatoes, sugar, 1/3 cup butter; beat in milk and eggs. Pour mix into a 5 quart casserole. Combine sugar, flour, butter and pecans. Sprinkle mix over potatoes. Bake 1 hour at 325 degrees. 6 to 8 servings. May substitute squash for sweet potatoes. |
