SWEET POTATO (OR YAM) CASSEROLE 
4 lbs. sweet potatoes or yams, cooked, peeled and mashed
1/2 c. butter, melted
1/2 c. honey
1/4 c. sherry
1/4 c. pineapple juice
1/4 c. firmly packed, dark brown sugar
1/2 tsp. salt
1 c. miniature marshmallows

Heat oven to 350 degrees. Grease 1 1/2 quart casserole. In large bowl, combine potatoes, honey, butter, sherry, pineapple juice, brown sugar and salt; mix well. Spoon into greased 1 1/2 quart casserole; top with marshmallows. Bake at 350 degrees for about 30 minutes.

TIPS: Canned yams may be substituted for fresh sweet potatoes. One (6 ounce) can crushed pineapple, juice and all, may be substitute for pineapple juice.
