ESTHER'S SWEET POTATO CASSEROLE | |
4 c. hot mashed sweet potatoes 1/3 c. butter 2 tbsp. sugar 2 eggs, beaten 1/3 c. milk 1/3 c. chopped pecans 1/3 c. brown sugar 1/3 c. flaked coconut 1/3 c. melted butter Mix sweet potatoes, 1/3 cup butter, 2 tablespoons sugar, beaten eggs and milk. Pour into 1 1/2 quart casserole, greased with Pam. Combine pecans, coconut, brown sugar, flour and stir in melted butter. Sprinkle mixture over sweet potatoes. Bake in slow oven, 325 degrees for 1 hour or until set. Always a must for Thanksgiving. |
