GERMAN APPLE CAKE 
3 eggs
1 1/3 c. sugar
1 tsp. vanilla
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
2 c. flour, sifted
4 apples, chopped (fold in last)
1/2 c. nuts (if desired)

TOPPING:

1/4 c. nuts (if desired)
2 tbsp. white sugar and 1/2 teaspoon cinnamon

Bake at 350 degrees for 35-40 minutes. Tube pan, 50 minutes.
