WINTER CARROT CASSEROLE | |
1 1/2 lbs. carrots (4 1/2 c. sliced) 1/2 c. mayonnaise or salad dressing 2 tbsp. chopped onion 2 tbsp. horseradish 1/4 tsp. salt 1/4 c. crushed saltines crackers (about 7) 2 tsp. melted butter Dash of pepper Cook carrots until tender, drain. Combine mayonnaise, onion, horseradish, salt and pepper. Spoon over carrots. Mix crumbs and butter. Sprinkle on top. Bake, uncovered, in 350 degree oven for 30 minutes. |
