WINTER CARROT CASSEROLE 
1 1/2 lb. carrots, sliced (4 1/2 c.)
1/2 c. mayonnaise or salad dressing
2 tbsp. chopped onion
2 tbsp. horseradish
1/4 tsp. salt
Dash of pepper

Cook carrots until tender. Drain. Combine mayonnaise, onion, horseradish, salt and pepper. Mix gently with carrots. Place in 1 quart casserole. Top with 1/4 cup crushed crackers blended with 2 tablespoons melted butter. Bake, uncovered, at 350 degrees for 30 minutes. Makes 4-6 servings.
