CHICKEN CACCIATORE 
3 lb. chicken, cut up
2 tsp. dried parsley
3 lg. onions, diced
3 cloves garlic
1 (15 oz.) tomato puree
3/4 tsp. oregano
1 1/8 c. water
1 c. fresh mushrooms
1/8 c. vermouth (optional)
Salt & pepper to taste

Brown chicken. Remove. Saute onions and garlic. Add other ingredients and chicken. Cook until chicken is soft.
