CHICKEN CACCIATORE | |
3 to 4 lb. chicken, cut up 1 or 2 green peppers, cut in strips 2 onions, sliced 1 tsp. salt 1/4 tsp. pepper 1 bay leaf 1/2 tsp. oregano 1/2 c. Parmesan cheese 1 lg. can tomato puree 1 lg. can tomatoes Bake chicken in covered pan at 350 degrees for 45 minutes, then bone chicken. Blend all remaining ingredients, spread evenly over chicken. Simmer covered at 250 degrees for 1 hour or 300 degrees for 1/2 hour. Serve with any pasta. |
