CHICKEN CACCIATORE 
4 lbs. chicken pieces
1/2 c. flour
1 tsp. salt
1/2 c. olive oil
1/4 c. chopped onions
1 clove garlic, chopped
1/4 c. grated carrot
3 sprigs parsley
2 c. tomato puree
1 tsp. salt
Dash pepper
1/4 c. sherry or white wine or marsala

Put flour in bag or container and shake chicken in flour, sprinkle with salt and brown in oil until golden on all sides. Place in covered dish in warm place. Brown onion, garlic, carrot and parsley in oil left in frying pan.

Add tomato to ingredients in frying pan, stir and add salt and pepper and bring to a boil. Add chicken and wine and simmer 30 minutes or until chicken is tender. Serves 4 to 6.
