WAGON WHEEL PIE 
1/2 c. chopped onion
2 tbsp. butter
1 (12 oz.) can luncheon meat
1 1/2 pkgs. frozen mixed vegetables
1/2 c. grated cheddar cheese
1/2 c. evaporated milk
2 eggs, beaten
2 tbsp. flour
1/2 tsp. salt
1/4 tsp. paprika
1 unbaked pie shell

Steam onions in butter in covered saucepan, low heat 10 minutes. Set aside. Cut meat lengthwise 1/4 inch slices. Cut remaining slices into bite-size pieces. Partially cook vegetables, drain. Put vegetables and all 6 ingredients. Mix well. Pour in shell. Cut reserved luncheon meat in half. Slice and spread over top. Bake at 400 degrees for 30 minutes.
