PORK WITH APPLE RAISIN SAUCE 
3 lb. pork loin or tenderloin
1 c. raisins
1 c. port wine
3 med. apples
Salt and pepper to taste
1 c. chicken stock

Cook raisins, stock, and port over low heat until raisins are soft. Meanwhile, peel, core, and slice apples. Add apples to sauce and remove sauce from heat. Season pork loin with salt and pepper. Brown pork over high heat; place in oven and finish cooking at 350 degrees (1 hour for loin - 15-20 minutes for tenderloin). To serve: Arrange slices of meat on top of the sauce.
