BAKED CRANBERRY PUDDING | |
1 c. sugar 2 c. flour 2 1/2 tsp. baking powder 1/2 tsp. salt 2/3 c. milk 3 tbsp. butter, melted 1 egg 2 c. raw cranberries Preheat oven to 350 degrees. Grease 9 inch square pan. Combine sugar, flour, baking powder and salt. Stir in milk, butter and egg; beat 2 minutes. Stir in cranberries. Pour into pan. Bake 40 minutes. Serves 8. SERVE HOT WITH BUTTERCREAM SAUCE: 1 1/2 c. sugar 3/4 c. whipping cream 1/4 c. butter 2 egg yolks, slightly beaten 1 tsp. vanilla Combine sugar, cream and butter in saucepan. Cook 5 minutes, stirring constantly. Gradually stir hot mixture into egg yolks. Then return to saucepan and stir over low heat until thickened. Stir in vanilla. |
