SWISS CHEESE POTATO CASSEROLE 
1 celery root, approximately 1 lb., peeled
1 1/2 lb. or more potatoes, peeled
1 sm. onion
1 lb. smoked sausage
1/2 or more lb. Swiss cheese, grated (2 or more cups)
Salt and pepper
1 1/2 or more c. half & half or milk

Preheat oven to 425 degrees. In processor or by hand, slice celery root, potatoes, onion and sausage uniformly.

In a 3-quart baking dish, sprayed with non-stick coating, layer half of each ingredient, then half of the cheese. Salt and pepper lightly. Repeat layers. Pour half & half over casserole. Lower oven temperature to 400 degrees. Cover, bake for 30 minutes. Uncover and bake 30 minutes longer. Remove from oven and let stand 10 minutes before serving. Serve with green salad, hearty red wine or beer and dark bread.
