APPLE-SCOTCH COOKIES 
2 c. flour
2 tsp. baking soda
1 tsp. cinnamon
3/4 tsp. salt
1 1/4 c. firmly packed brown sugar
3/4 c. butter, softened
2 eggs
1 tsp. vanilla
1 (12 oz.) pkg. butterscotch morsels
2 c. chopped apples
1 c. oats, uncooked

Preheat oven to 350 degrees. In small bowl, combine flour, soda, cinnamon and salt. In large bowl, combine brown sugar and butter; beat until fluffy. Beat in eggs and vanilla. Gradually beat in flour mixture. Stir in morsels, apples and oats. Using a rounded tablespoon for each cookie, drop dough onto lightly greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes. Makes 3 1/2 dozen cookies.
