CARROT AND RAISIN BREAD | |
1 c. grated carrots 1 c. raisins 1 c. brown sugar 1 tsp. baking soda 1 tbsp. corn oil 1 c. boiling water 2 eggs 2 tsp. baking powder 1 tsp. salt 2 1/2 c. flour 1/2 c. chopped walnuts (optional) Combine carrots and raisins with sugar, soda and oil in large bowl. Stir in boiling water and cool to lukewarm. Add eggs and beat 1 minute. Stir in baking powder, flour just mix until moistened, do not beat. Pour into greased loaf pan and bake at 350 degrees for 1 hour. Turn bread out on rack and cool. Bread slices better the next day. |
