FRESH CARROT BREAD 
2 c. sugar
3 eggs
1 c. oil
3 c. flour, sifted
1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 c. grated, raw carrots
1 c. pecans

Mix sugar, oil and eggs in a bowl. Add sifted flour, baking powder, soda, salt and cinnamon. Stir in carrots and nuts. Pour into two greased bread pans and bake at 350 degrees for 40 minutes. Cool.
