CARROT NUT BREAD 
1 1/2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 c. white sugar
3/4 c. oil
2 eggs
1 c. grated carrots
1/2 tsp. vanilla
1/4 c. chopped nuts

Sift together: flour, salt, baking powder, soda. combine: sugar, oil, eggs, carrots, vanilla and nuts. Mix all ingredients together thoroughly on medium speed until well blended.

Grease bread pan. Pour batter in pan. Bake at 350 degrees for approximately 35-45 minutes.
