CARROT - PINEAPPLE BREAD 
3 eggs, beaten lightly
1 1/4 c. oil
1 3/4 c. sugar
2 c. grated carrots
8 oz. can crushed pineapple with juice
1 c. chopped nuts OR raisins
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 1/4 tsp. cinnamon

Mix eggs, oil and sugar and beat well. Add carrots, pineapple and nuts or raisins and beat well. Combine dry ingredients and beat into the above.

Pour batter into 2 large loaf pans or 3 small ones that have been sprayed with Pam. Bake 1 hour at 325 degrees.

So, don't put your dry on top of your wet, always add wet to dry. Save yourself some mess. I did this once exactly it was good. Then added a half cup of sour cream, reduced the oil by 1/4 cup, and used fresh pineapple that was about to go bad.
