MEXICAN FRUIT CAKE | |
Cake: 1 - 20 oz. can crushed pineapple (undrained) 2 c. plain flour 1 tsp. baking soda 2 c. sugar 2 eggs 1 c. chopped walnuts or pecans Mix cake ingredients and pour into a 13 x 9 greased pan. Bake at 350°F for 45 minutes. Frosting: 1 box powdered sugar 1 - 8 oz. pkg. cream cheese 1 stick butter (melted) Mix frosting ingredients and blend until smooth and frost cake while hot. |
