MEXICAN FRUIT CAKE 
2 c. all purpose flour
2 tsp. baking soda
2 c. sugar
2 eggs
1 dash salt
1 c. English walnuts or pecans, crushed
1 (20 oz.) can crushed pineapple

In a large bowl, mix together all ingredients, including packing juice, by hand. Bake at 350 degrees for 30-40 minutes. Frost with Mexican Fruit Cake Icing.

This recipe was a surprise. We don't like traditional fruit cake, but LOVED this. It is easy and moist and very good. Really doesn't need frosting it is that good.

I also add dried cranberries to this and add 3/4 c of regular walnuts. I also top the cooled cake with a cream cheese frosting or sometimes cover the cake with cream cheese frosting while the cake is pretty warm and refrigerate the cake.
