HERBED LENTIL AND POTATO STEW | |
1 onion, chopped 1 clove garlic, minced 1 tsp. olive oil 1 tsp. marjoram 1 tsp. thyme 1 lg. potato or 2 sm., chunked 1 c. brown lentils, picked over and washed 1 can tomato paste 1 lg. can tomato soup 2 c. water Saute onion and garlic in oil in large pot. When onion is soft, add herbs. Add potatoes, lentils, tomato paste, juice and water. Bring to a boil. Lower heat and simmer 1 hour, covered, or use a pressure cooker, bring to pressure and simmer 40 minutes. |
