STEWED APPLES AND SWEET POTATOES 
6 med. potatoes (1 1/2 lbs.)
1 c. milk
2 med. cooking apples, cored, peeled & sliced
Salt
White pepper
Ginger
Chopped parsley

Cut potatoes in 1/4" slices, put in heavy skillet and add 1 cup milk. Bring to boil, cover and simmer until almost tender. Add apples, stir carefully and add more milk if necessary. (Milk should be almost absorbed when potatoes are soft.) Season with salt, pepper and ginger and sprinkle with parsley. Good with sausage or other pork. Serves 4.
