SUE'S PICANTE SAUCE 
1 can Rotel tomatoes
2 lg. cans tomatoes
Vinegar
Onions
Bell pepper
Crushed red pepper (or red pepper seeds)
Hot sauce
Cajun seasoning
Garlic salt

In large pot, 4 to 6 quarts, mash up tomatoes with potato masher. Add can of Rotel tomatoes, dice up 3 to 4 onions, add to mix. Begin to simmer on top of stove. Dice up bell peppers, add to mix. Also add red peppers, spices, hot sauce and vinegar to taste. This will require about 1 small bottle. The sauce needs to cook until the peppers turn darker. This is enough sauce for 10 to 12 pint jars. Jalapeno peppers may be added to make extra hot.
