PICANTE SAUCE 
3 qt. stewed tomatoes
1 to 2 onions, diced
1 green pepper, diced
2 sm. cans tomato paste
1 (15 oz.) can tomato sauce
1 stalk celery, diced
1 sm. carrot (optional)
1 tbsp. (scant) dried, crushed red pepper
1 tbsp. (scant) red cayenne pepper
2 tsp. cumin
Onion & garlic powder or salt (or both)
3 tbsp. vinegar
1 jalapeno pepper (add to taste) (Use gloves to cut up.)

Mix all the above and simmer 1 to 2 hours. Let cool or can in sterilized jars. Makes approximately 6 pints.
